Supper tonight was a delicious chicken dish from one of my mom’s ‘Quick Cooking’ magazines. It was indeed quick, and so simple that I can recall the recipe now, and will include it behind the cut.

Afterwards we watched Big Fish, which I loved as much the second time as the first. I especially adore Josephine, particularly in the scene where she asks if she can photograph Edward. I love the way her eyes shine in the semidark of his bedroom, the openness in her delicate face. When the hospital scene began I got up to un- and reload the dishwasher. Though it’s one of my favorite scenes I’ve done more than enough crying lately, and just hearing it was heart-rending enough.

The movie actually reminds me a lot of Life of Pi, but I shan’t say how just now since Katie’s only partway through. When you’ve finished, though, we must discuss it. Must must.

My car’s air conditioning is finally going to be fixed tomorrow. And, better yet, it’s free. (Much better, especially since I got the you-need-to-start-repaying-your-student-loans-this-fall letter today.) Then I can use it to drive my ass to the salon, since my hair is getting ridiculously long.

Savory Chicken Dinner (I think that’s the title, anyhow)

  • 4 pieces boneless skinless chicken breast (6 to 8 oz. each)
  • 1 envelope savory herb and garlic soup mix
  • 1 large onion
  • 2 large red potatoes
  • 3 T water

Cube potatoes and cut onion into medium-sized wedges. In large plastic bag (gallon-sized) combine soup mix and water. Add chicken, potatoes, and onion and toss to coat. Place mixture in a greased 13x9x2 pan and bake uncovered at 350 for 40-45 minutes (until meat is cooked and juices run clear), stirring potatoes and onions occasionally.
